Join the Genuine Foods team as our Production Kitchen Manager. This integral role in the company will create and execute National School Lunch Program (NSLP) compliant school food meals grounded in health, taste and simplicity. The Kitchen Manager is lead for menu planning, food ordering, and production - including supervising the kitchen staff and our delivery driver - and managing food costs.
Responsibilities include all culinary and kitchen management functions such as developing and costing out a menu, procuring food, implementing our HACCP plan and training staff; upkeep of quality control standards; training and instructing staff at multiple sites on cooking, serving, assembling, and presenting meals.

Responsibilities and Duties
The Production Kitchen Chef/Manager will report to and work alongside the Regional Area Managerand work in concert with the Genuine Foods management team to constantly develop and improve the systems and processes necessary to prepare and serve high-quality meals. The Production Kitchen Chef/Manager maintains full accountability and tracks and drives quality control and continuous improvements for the following:

Menu Planning and Production

  • Executes on a monthly basis a 21-day meal cycle for lunch, breakfast and snack that is high-quality, tastes good and is financially sustainable.
  • Works with our nutritionist to ensure any changes to the menu cycles are compliant with the National School Lunch Program.
  • Maintains a physical menu book with recipes, preparation instructions, serving instructions and presentation pictures.
  • Manages recipe standardization, ensuring correct portioning, and drives continuous improved based regular client and staff feedback.
  • Prices the menu out based on food and production kitchen labor costs.
  • Tests new menu items at client sites before adding them to the menu cycle.
  • Creates the production schedule a week out from execution, constantly updating it for new menu items.
  • Manages and schedules kitchen staff, delivery driver and delivery helper.
  • Trains staff on recipe execution.
  • Ensures food safety practices are being followed.

 


Ordering

  • Places orders for all food and non-food products and is the lead contact for our vendors.
  • Initiates and manages relationships with new and current vendors and manages terms, contracts, etc.
  • Tracks orders in a shared spreadsheet by cost and shares with the management team.
  • Creates a weekly report that tracks actuals vs. projected costs.
  • Reconciles site-based invoices weekly and keeps tracks of credits etc.,
  • Ensures distributors maintain the necessary stock of specialty products for the menu cycles.

Effective Communication to Sites

  • On a daily basis, effectively communicates food load out and delivery.
  • In real-time communicates any last-minute menu changes or necessary smart substitutions.

Qualifications and Skills

  • 3+ years of experience in a formal kitchen setting with a love for food and people; a culinary degree is not required but highly desirable
  • Mission-driven team player with a positive attitude, strong work ethic and the willingness to pitch in and support colleagues
  • Entrepreneurial spirit with the ability to lead a team to best-in-class performance, while building consensus and affecting positive change
  • School food and or contract food management is a plus
  • Self-motivated, able to lead and be a proactive problem solver and make sound decisions on-the-fly
  • Able to multi-task with keen attention to detail
  • Understanding of professional cooking & knife handling skills, local and seasonal ingredients and diverse cooking styles and cultures
  • Understanding and knowledge of safety, sanitation.
  • Must be ServSafe certified
  • Excellent communication and interpersonal skills including written, phone, electronic and in-person.
  • Must be able to stand for long periods of time
  • Must be able to lift up to 50 lbs
  • Basic computer skills (Microsoft Office, Google Docs, Dropbox, Slack etc.)
  • Ability to work in a continuously changing environment that demands flexibility and good humor
