The Commissary Manager will manage the day-to-day operations at the Rethink Commissary Kitchen. This is a culinary focused position that will also support the in-kind donation of excess food and meal production process. The Manager will also help play a key role in receiving, and incorporating in-kind donations into the menu development at the Commissary, in addition to managing a team of Team Members and Supervisors. This is an onsite, full-time position.

Key Responsibilities:

  • Direct recipe execution and production schedules
  • Monthly menu planning, station rotation and ordering
  • Maintain kitchen standards of cleanliness, organization and workflow
  • Keep team on track with their production schedule
  • Execution of daily food deliveries to CBOs
  • Communicate with operations & transportation to facilitate and resolve potential operational conflicts for food drop offs and pickups
  • Organize receiving and distribution of donations
  • Lead development and training of the kitchen staff:
  • Enforce Safety Guidelines and Food Safety Standards (responsible for passing regulatory inspections)
  • Ensure proper setup and breakdown of kitchen, following ReThink protocols and procedures
  • Maintain proper storage and rotational procedures (FIFO) of house equipment and dry storage
  • Manage kitchen staff (scheduling, daily management, quarterly reviews, hiring & firing, etc)
  • Create training plans and Standard Operating Procedures for efficiency in the kitchen
  • General administrative duties:
  • Completion and review of detailed logs (food donations, temperatures, meal creation, etc) including, but not limited to, Rethink Food logs for filing, and quarterly managerial reviews of kitchen team
  • Order Inventory of required materials (packaging, disposables, dry goods) needed on a weekly basis
  • Manage labor and kitchen costs within specified budget
  • Monthly inventory of Rethink kitchen equipment and submit to Senior Manager of Operations
  • Attend weekly Operations meetings
  • Schedule and facilitate weekly kitchen team meetings
  • Developing and sustaining productive cross-functional relationships
  • Supporting other department activities as needed

Skills Knowledge and Expertise:

  • Minimum 3 years managing NYC restaurant or commercial kitchens
  • NYC DOH Food Handler's Certification required
  • Must be keen to details and have a desire to work with high standards, efficiency and food safety.
  • This role requires the ability to creatively work with food excess items collected from our donation partners; Michelin Starred restaurants, excess vegetables from farms, and others items that are donated from various financial institutions, and food industry partners
  • Effective communication and management skills/ ability to take direction from supervisors and lead a team constructively
  • Ability to work in a clean, organized, and efficient manner in a high-pressure environment
  • Flexibility, and strong ability to problem solve
  • Must have excellent knife skills and proficiency in all aspects of cooking
  • Ability to work independently, proactively, and resourcefully
